By now you know I’m not eating my bananas but mashing them up for something delicious. So many breakfast and snacks options. Let’s dig in.
Ingredients:
2 ripe bananas
I cup flour
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1/4 cup sugar
2 tablespoon vegetable oil
2 tablespoon melted unsalted butter
2 tablespoon cocoa/drinking chocolate
1 large egg
2 tablespoon milk
1 teaspoon essence
Method:
Mash the bananas in a bowl
Add the egg, butter and vegetable oil one at a time while mixing well. Don’t over combine
Add sugar. Mix properly
Add flour, baking powder, baking soda, salt and cocoa one at a time without over combining and whisk the paste properly
At this point you can add 2 tablespoons buttermilk or its substitute
Add your preferred essence
The paste at this juncture should be thick
Grease your muffin tin with butter or vegetable oil
Scoop 3/4 of the mixture in each
Bake in 200 degrees celcius for 8 minutes, then reduce to 175 degrees for another 8 minutes.
Let them cool, serve and enjoy with your preferred drink.
PS: Do away with the cocoa/chocolate. It takes the banana flavor away.
